Healthy and Fun Halloween Recipe

I can blend teas and herbs into a fabulous concoction all day long. What I struggle with is cooking and making it taste somewhat palatable. I often resort to the Google machine for recipes- today's recipe is no different.

I really wanted to make something unique, healthy, and not a sweet. So I searched for "awesome healthy Halloween recipes" and looked at all of the great creations chefs and hobbyists alike had whipped up. Carving pumpkins is one of my favorite Autumn activity I was instantly drawn to this adorably creative dinner turning bell peppers into jack-o-lanterns.

Here is the recipe below compliments of Kristina Sloggett of

dairy, egg, soy, oil, and gluten free, vegan

    • ½ cup dry quinoa (black for Halloween theme)
    • 1 cup fresh carrot ginger juice
    • 1 cup cooked black beans
    • 2 orange bell peppers
    • sea salt

  1. *Juice 5 carrots and 1 inch piece ginger.
  2. Combine quinoa and juice, bring to boil. Reduce to simmer, cover and cook for 20 minutes.
  3. Meanwhile, carve your peppers. Combine cooked quinoa with black beans, salt to taste, fill peppers.
  4. Bake at 350 for 30 minutes. Serve over spinach salad.
  5. *No juicer? Buy a bottle of carrot ginger juice - generally found in the chilled beverage section.

Final Thoughts

Enjoy this fun and healthy entrée while the trick-or-treaters come knocking at your door. Happy Halloween!
